"JUST FOR STARTERS"
LOBLOLLY BAY LOBSTER CHOWDER


1 1/2 CUPS LOBSTER MEAT UNCOOKED, CHOPPED
1 POTATO, PEELED AND DICED
1 CUP WATER
2 TEASPOONS BUTTER
1 ONION, MINCED
1 TEASPOON SALT
1/2 TEASPOON PAPRIKA
1/2 TEASPOON WHITE PEPPER
2 CUPS MILK
1 CUP LIGHT CREAM
2 TABLESPOONS COGNAC
FRESH PARSLEY, FINELY MINCED

MIX TOGETHER THE DICED POTATO, WATER AND SALT IN A SMALL SAUCEPAN. BRING TO A BOIL. REDUCE HEAT & SIMMER UNTIL THE POTATO IS TENDER. SET ASIDE. HEAT THE BUTTER IN A LARGE SAUCEPAN. ADD THE MINCED ONION & SAUTE UNTIL THE ONION IS TRANSLUCENT. STIR IN THE SEASONINGS. ADD THE MILK AND CREAM. BRING THE MIXTURE TO A BOIL, STIRRING CONSTANTLY. REDUCE THE HEAT AND SIMMER, UNCOVERED, UNTIL THE LIQUID IS SMOOTH. STIR IN THE LOBSTER AND THE POTATO WITH ITS COOKING LIQUID. SIMMER THE CHOWDER FOR 10 MINUTES MORE. STIR IN THE COGNAC. GARNISH THE CHOWDER WITH THE FRESH PARSLEY.

ALABAMA JACK FRITTERS


1 POUND CONCH, CHOPPED
2 EGGS
3 1/4 CUPS ALL-PURPOSE FLOUR
1/2 GREEN PEPPER, CHOPPED
1/4 RED BELL PEPPEER, CHOPPED
1/4 YELLOW BELL PEPPEER, CHOPPED
1/2 TEASPOON CAYENNE PEPPER
1/2 TEASPOON BAKING POWDER
1/2 TEASPOON OLD BAY SEASONING
1/2 CUP BEER (YOUR CHOICE)
OIL FOR DEEP-FRYING

COMBINE CONCH AND NEXT 8 INGREDIENTS. ADD 1/2 CUP BEER AND MIX THOROUGHLY. REFRIGERATE FOR 2 HOURS. BRING THE OIL TO 350 DEGREES. DROP CONCH MIXTURE BY HEAPING SPOONFULS INTO HOT OIL. ADD 1 FRITTER AT A TIME. FRY ONLY 6 AT A TIME. FRY FOR ABOUT 5 MINUTES OR UNTIL GOLDEN BROWN AND LIGHT. DRAIN AND SERVE ON A BED OF LETTUCE WITH YOUR FAVORITE FRITTER DIPPING SAUCE.

BOMBA'S JERK CHICKEN


1 1/2 POUNDS SKINLESS, BONELESS CHICKEN BREASTS CUT INTO STRIPS
8 GREEN ONIONS, DICED
1 MEDIUM SIZE ONION, DICED
3 SCOTCH BONNET PEPPERS, SEEDED AND MINCED
3/4 CUP SOY SAUCE
1/2 CUP RED WINE VINEGAR
1/4 CUP VEGETABLE OIL
1/4 CUP BROWN SUGAR
2 TABLESPOONS FRESH THYME LEAVES
1 TEASPOON WHOLE CLOVES, CRUSHED
1 TEASPOON BLACK PEPPERCORNS, CRUSHED
1/2 TEASPOON GROUND CLOVES
1/2 TEASPOON GROUND NUTMEG
1/2 TEASPOON GROUND ALLSPICE
1/4 TEASPOON GROUND CINNAMON

COMBINE ALL INGREDIENTS, EXCEPT THE CHICKEN IN A FOOD PROCESSOR. PROCESS FOR 10 TO 15 SECONDS AT HIGH SPEED. PLACE THE CHICKEN IN A BOWL AND COVER WITH THE MARINADE. COVER AND REGRIGERATE FOR 4 TO 6 HOURS. REMOVE THE CHICKEN FROM THE MARINADE AND DRAIN OFF EXCESS LIQUID. PLACE ON THE OILED, PREHEATED GRILL AND COOK FOR 4 TO 5 MINUTES ON EACH SIDE, OR UNTIL THE CHICKEN IS WHITE IN THE CENTER. JERK COOKING IS A JAMAICAN METHOD OF SLOWLY BASTING AND COOKING CHICKEN, PORK, BEEF OR FISH. THE JERK MARINADE IS FULL OF COMPLEX FLAVORS AND IS DESCRIBED AS HOT, YET SWEET, AND VERY SPICY!

1/2 CUP MILD ONION, CHOPPED
2 CUPS FRESH MANGO, DICED
1 1/2 TABLESPOONS SEEDED SERRANO CHILI, MINCED
2 TABLSPOONS FRESH CILANTRO, CHOPPED
3 TABLESPOONS TEQUILA
(JIMMY BUFFETT'S MARGARITAVILLE TEQUILA)
1 TEASPOON GRATED LIME PEEL
2 TABLESPOONS LIME JUICE, FRESH SQUEEZED
1/4 TEASPOON GROUND CUMIN

IN A MEDIUM SIZED BOWL, MIX THE ONION, MANGO, SERRANO CHILE, CILANTRO, TEQUILA, MILE PEELS, LIME JUICE AND CUMIN. BLEND WELL AND SERVE AT ROOM TEMPERATURE FOR FULL FRUIT FLAVOR. YIELD: 4 SERVINGS OR 3 CUPS SALSA. THIS "MARGARITA" SALSA IS EXCELLENT WHEN SERVED TO COMPLIMENT CHICKEN, PORK OR SHRIMP. SERVE WITH YOU FAVORITE STYLE OF SWEET POTATOES, BAKED OR GRILLED!

SPICY SWEET POTATO MUFFFINS


2 SWEET POTATOES, WASHED
1 1/2 CUPS ALL-PURPOSE FLOUR
3/4 CUPS PACKED BROWN SUGAR
1/2 TEASPOON SALT
2 TEASPOONS BAKING POWDER
1 TEASPOON BAKING SODA
1 TEASPOON CINNAMON
1/2 TEASPOON GINGER
1/4 TEASPOON CLOVES
1/4 CUP VEGETABLE OIL
1 EGG

GREASE A 12-CUP MUFFIN PAN. PREHEAT OVEN TO 500 DEGREES. REDUCE HEAT TO 400 DEGREES AND BAKE SWEET POTATOES 20 - 25 MINUTES OR UNTIL TENDER. PIERCE WITH A FORK TO TEST. COOL, PEEL AND PUREE IN A FOOD PROCESSOR OR BLENDER. MEASURE 1/2 CUP FOR MUFFINS.
COMBINE IN LARGE MIXING BOWL FLOUR, SUGAR, SALT, BAKING POWDER, BAKING SODA, CINNAMON, GINGER AND CLOVES. IN A SEPARATE CONTAINER COMBINE THE OIL, MILK AND EGG. WHISK WELL. FOLD IN SWEET POTATO PUREE. POUR SWEET POTATO MIXTURE INTO THE FLOUR MIXTURE. MIX JUST UNTIL ALL INGREDIENTS ARE COMBINED. POUR BATTER EVENLY INTO MUFFIN PAN. REDUCE HEAT TO 350 DEGREES AND BAKE MUFFINS FOR 25 MINUTES OR UNTIL LIGHTLY BROWNED. REMOVE FROM PANS AND COOL ON A WIRE RACK. THESE ARE DELICIOUS SERVED WITH A SWEET CREAM BUTTER OR CHEESECAKE FLAVORED CREAM CHEESE!

WE WERE ALREADY DREADING COMING BACK TO THE COLD OF NORTH CAROLINA AND THESE MUFFINS, MADE OF FRESH ISLAND SPICES CERTAINLY ADDED TO OUR APPREHENSION."

BLEND OR SHAKE TOGETHER ALL INGREDIENTS AND SERVE OVER ICE. GARNISH WITH A CHERRY OR ORANGE SLICE, BUT ALWAYS SPINKLE WITH A GENEROUS AMOUNT OF FRESH NUTMEG.

1 1/2 OUNCES OF FOXY'S FIREWATER RUM
1 OUNCE OF FOXY'S SILVER FOX RUM
1/2 OUNCE OF APRICOT BRANDY
1 OUNCE PINEAPPLE JUICE
2 OUNCES ORANGE JUICE
1 OUNCE PASSION FRUIT
1/2 OUNCE BUBA TOUEE
1 TEASPOON POWDERED SUGAR

MIX IN BLENDER WITH 1/2 CUP OF CRUSHED ICE. POUR INTO A TALL GLASS. FLOAT A SPLASH OF RUM ON TOP AND GARNISH WITH AN ORANGE SLICE AND A CHERRY. A POWERFUL TROPICAL CONCOCTION!
